Cheese Maker

Interviewed in 2012, Massimo Antonini, born in 1956, is one of the Presidium Caciofiore's producers in Rome countryside. In the interviews, he speaks about his firm and its production.

Caciofiore is a kind of cheese that can be considered an ancestor of Pecorino Romano cheese. Differently from the latter, Caciofiore is made by dipping vegetable rennet made ??from artichoke flower or thistle (Cynara cardunculus Cynara or scolimus) collected during the summer in raw whole milk.

Antonini's farm and its resturant is lead by by Massimo, his wife Daniela and her daughter Sara. Located a few kilometers from Rome, in the countryside on the shores of Bracciano Lake, the firm produces also pecorino seasoned in cave, ricotta Roman caciotta and other types of cheese exclusively made with raw sheep milk.
