Cacciani's resturant

In this interview, conducted in 2012, Paolo Cacciani, born in 1962, and his brother Leopoldo, born in 1967, talk about the family business. They are the last descendants of the Cacciani family; in 1922, their grandparents opened the resturant. It  was then managed by Armando, Tommaso, Dina and Adriana, Paolo and Leopoldo's parents, uncle and aunt. Finally, it was run by the brothers together with their sister, Caterina.

The Cacciani's Restaurant is located in the center of Frascati with panoramic views of the Alban hills. It is a great restaurant with traditional as well as innovative and historical dishes. In the interview, the brothers present three recipes: pasta with pecorino cheese and pepper, classic "devilled" chicken, and their grandfather's trifle.
